Trappist style tropical fruit driven aromas. Complex palate, with a lingering long aftertaste. The wort is split into two batches: one is inoculated with a Belgian abbey yeast which produces banana, paw paw and mango aromas; the other batch is inoculated with an Australian yeast that gives richness on the palate and in time apricot aromas. With bottle aging the tropical fruit aromas dissipate to give rich caramel malt aromas.

Linear balanced hop bitterness, with full mid palate and sweet bitter finish.
