Trappist style tropical fruit driven aromas complex palate, with lingering long aftertaste. Once the malts have been brewed the wort is split into two batches and one is inoculated with a very ancient strain of Belgian Abby yeast which produces dominate banana, paw paw, mango aromas, the other batch is inoculated with an Australian yeast that gives richness on the palate and in time apricot aromas. With bottle aging the tropical fruit aromas dissipate to give rich caramel malt aromas.
